On 19-20 September St. Petersburg will host the Russian Fish gastronomic festival, a new project by the organisers of Seafood Expo Russia, Russia’s leading fisheries industry exhibition. The festival will complement the business program of the forum and exhibition with a consumer-focused format aimed at promoting fish and seafood products. More than 25000 visitors are expected to attend, along with 2000 HoReCa professionals taking part in the industry program.
Haute cuisine for wide audience
The festival will introduce visitors to contemporary fish and seafood cuisine and products made from aquatic biological resources. The venue will feature 12 restaurant concepts from fish restaurants across Russia. Chefs will create special menus and prepare dishes in open kitchens.
During live cooking and tasting shows visitors will see large tuna being cut and prepared according to original recipes. Another highlight will be Kamchatka-style fish soup made with Chinook salmon and seafood and cooked in a 1,200-litre cauldron.
The Fish on the Grill Championship will be one of the central events of the program. On the first day, 24 chefs from St. Petersburg will demonstrate their skills in preparing fish and seafood. The following day, 16 amateur teams from cities across Russia will join the competition. The second stage will be judged by the National Barbecue League.
Visitors will also be able to attend 12 sessions at the Russian Fish Academy and around 50 workshops at participating companies’ stands. Renowned chefs and culinary school instructors will share their own recipes for different types of fish and seafood and explain how to create food pairings.
For professionals, by professionals
As part of the HoReCa Forum, round-table discussions will bring together executives from fishing companies, restaurateurs and chefs. Experts will discuss the needs of the foodservice market, requirements for fish product preparation and practical approaches to partnership with local producers in the restaurant and catering sector.
Particular attention will be given to ways of making fish and seafood more accessible and appealing to consumers, both in their daily diet and dining-out routine. The professional program will also include 24 workshops.
More than 20 fishing companies will showcase their products in the exhibition area. Importers, suppliers, kitchen equipment manufacturers and companies producing ingredients for the food industry are also invited to participate.
A key feature of the Russian Fish festival will be the combination of gastronomic and cultural program. Bars will offer drinks selected by sommeliers to pair with fish dishes while popular artists and bands will perform on the music stage throughout the two-day event. This format will present fish cuisine as part of contemporary urban leisure and dining culture.
The festival will take place at the Brusnitsyn Cultural Quarter, 30 Kozhevennaya Liniya, St. Petersburg.
